Beans & Cottage Cheese Quesadilla

Quesadillas are a perfect treat for the lunch or dinner. They are extremely easy to prepare. All you need is flour tortillas, red kidney beans, Indian Cottage cheese (Paneer), corns, onions, bell peppers, shredded Mozzarella cheese and some basic spices.

First time I tried Beans Quesadilla in a Mexican restaurant in Texas and I instantly fell in love with the flavors and filling of the tacos. For Mexican vegetarian cuisines, the key ingredients are beans, corns and rice along with veggies like mix bell peppers, onions, tomatoes or tomato puree. However, today I am making an Indian High Protein version of quesadilla using whole wheat roti or tortillas made at home simply with whole wheat flour.

Ingredients of Beans Paneer Quesadilla’s Filling

Beans : I prefer to use boiled red kidney beans for my quesadilla because that’s something which is easily available in an Indian Household. Generally, black beans are used for the same but I always saw them in can and i dont use Canned food because of numerous reasons. so, Whenever I boil beans to make beans curry, I keep a bowl separate for the same.

Paneer : It is referred as ‘Indian Cottage Cheese’ which is firm block like Tofu. Please note, Paneer is vegetarian and NOT VEGAN as its prepared from Cow’s milk.

Veggies : Key veggies used in quesadilla are mix bell peppers & onions. However, to make these quesadilla more nutritious, one can add steamed broccoli and carrots as well or make another variation of quesadilla just bu using variety of veggies.

Corns : Corns also complete these Quesadilla and adds a sweet flavor. I love adding corns to my quesadilla, However if you dont like them, feel free not to add them in the filling.

There are many variations you can try which i tried earlier like

  1. Chickpeas Quesadilla with Cashew Spread
  2. Chickpeas & Tofu Quesadilla
  3. Beans & Tofu Quesadilla, Chickpeas
  4. Paneer Quesadilla

and they all use same dressing as the same as this Beans & Paneer Quesadilla.

Ingredients

Ingredients to prepare the filling

  • 1 tsp Oil
  • 2 Garlic Cloves
  • 40 gm Onions
  • 40 gm Mix Bell Peppers
  • 1 tbsp Sweet Corn
  • 80 gm Kidney Beans
  • 40 gm Low Fat Indian Cottage Cheese (Paneer)
  • 1/2 tsp Red Chilli Powder
  • Salt as taste

Ingredients for Mint Chutney

  • 1/2 cup Fresh Mint Leaves
  • 1 cup Fresh Cilantro Leaves
  • 1 Green Chilli
  • 1 small Ginger
  • 1 Garlic
  • 1/3 cup Onions
  • 1/2 tsp Kala namak
  • 1/2 tsp Chaat Masala
  • Salt as taste
  • 1/4 cup Water (or more if required)

Base of the Quesadilla

  • 2 Whole Wheat Roti

Instructions

To Prepare the filling

  • In a Pan, add oil. Let it get hot. Then add finely chopped garlic cloves. Saute them for a minute
  • Now, Add finely chopped onions and saute them for 2-3 minutes. Then, add mix bell peppers finely chopped, sweet corns and boiled beans as well. Cook them for another 4-5 minutes.
  • Next step is to add all the spices like red chilli powder, salt, cumin powder. Mix well, Cover and cook for 5-7 minutes.
  • Add low fat cottage cheese but mash/grate/crumble it first. Mix with rest of the ingredients very well.
  • Using a masher, mash the stuffing roughly. Give it a gentle mix and the filling is ready.

To Prepare Mint Chutney

  • In a blender, add all chutney ingredients, mint leaves, cilantro leaves, green chilli, garlic, ginger, onions along with the spices. Add some water and blend to make vibrant green mint chutney.

To Prepare Quesadilla

  • For the dressing, take 2 tbsp yogurt and add 2-3 tsp mint chutney in it.
  • Take 1 whole wheat tortilla, apply the dressing on it. Spread the quesadilla filling prepared. Then add some mozzarella cheese over it, shredded or sliced its upto you. Apply dressing on other tortilla and make a sandwich of tortillas.
  • Now brush the pan with minimal oil and roast the quesadilla. Cover the pan and keep the flame low, it will allow cheese to melt.
  • Flip the quesadilla carefully and gently and follow same process to roast from other side.
  • Serve it hot with your favorite dip.
  • Tip : You can simply make half sized quesadilla and simply grill it if you want to avoid toasting in pan.
