Who doesn’t love Sandwich, Everyone right? People generally doubt eating Sandwich during their weight loss or weight maintenance. But i would say, it is the most comforting meal to prepare, However, the choice of bread should be good. This sandwich is one of my favorite meal to prepare.

This is not like a regular sandwich. It is high protein vegetarian sandwich which is extremely flavorful, filling and healthy. Basically everything is here which I prefer to be in any good sandwich. And most importantly, it is simple: just 20 minutes are needed to prepare this sandwich.

The base starts with mint chutney, which I have shared here, how to make a vibrant green dressing for the sandwich. It is a versatile chutney and can be used in variety of meals. next layer is a bed of lettuce and then there comes my next dressing prepared with boiled black chickpeas, probiotic and protein rich yogurt, handful of fresh mint leaves and some basic spices. Then comes a layer of slices tomatoes. You can add some more veggies like sliced cucumbers, pickled onions, sliced carrots and capsicum rings. I have also added low fat indian cottage cheese to add more protein in the sandwich

HOW I CHOOSE BREAD FOR THE SANDWICH

When it comes to sandwich, people argue about the bread. I understand most of the people’s perspective. White bread and brown bread are definitely not the right choices because they both are almost same, but with a difference of little brown color in brown bread. But if you go for whole wheat bread or sprouted grains bread (which I always prefer), It won’t harm you in anyway. FYI, the amount of macros in 1 slice of whole wheat bread is almost equal to 1 Whole wheat tortilla. You need to check the INGREDIENTS list on the nutrition label carefully. The first ingredient will be in the highest quantity and this way the order goes.

Ingredients

Black Chana Dressing

  • 80 gm Black Chana
  • 1/4 cup Fresh Cilantro leaves with stems
  • 10-12 Fresh Mint Leaves
  • 6 gm low fat greek yogurt
  • 1/4 tsp Kala Namak
  • 1/4 tsp Chaat Masala
  • 1-2 tsp lemon juice
  • Salt as taste

Mint Chutney

  • 1/3 cup fresh mint leaves
  • 1 cup Fresh cilantro leaves with stems
  • 1 small ginger chunk
  • 1 garlic clove
  • 1/4 tsp kala namak
  • 1/4 tsp chaat masala
  • 1/2 lemon's juice
  • Salt as taste
  • 1/4 cup water

Sandwich

  • 2 bread slices
  • 1/2 portion of black chana dressing
  • 4 tsp mint chutney
  • 1 lettuce leaf
  • 45 gm paneer
  • pinch of Chaat masala

Instructions

Black Chana Dressing

  • Put all the ingredients in a blender jar, boiled black chana, mint leaves, cilantro leaves, greek yogurt and the spices, lemon juice as well. Blend everything to make the dressing.

Mint Chutney

  • In a blender jar, add mint leaves, cilantro leaves, ginger, garlic, green chilli, spices, lemon juice and some water. Blend everything to make a vibrant green chutney.

Sandwich

  • Take two bread slices and toast them or grill them.
  • Take a slice of bread and apply mint chutney on it. Now, spread a layer of lettuce leaf and then the black chana dressing. There should be generous amount of the dressing.
  • Now, add sliced tomatoes, paneer (Indian cottage cheese) and sprinkle some chaat masala as well.
  • Apply mint chutney on other bread slice as well and make a sandwich. Cut into half and serve it.
